Chilling poolside at a sunny tropical resort with a cold drink in hand is what I imagined when I sipped this Banana Coconut Smoothie!

Ah, that was a nice feeling! And much better than thinking about my “stuff to do” list. 

Things got even better when I started to imagine infusing this cold smoothie with Malibu Rum. 

I’ll save that idea for the weekend!

For now I’m sticking with this Malibu-free version as way to give my tired mid-week mind a quick escape to the tropics.

Banana Coconut Smoothie

A frosty tropical smoothie that’ll have you feeling like you’re on vacation.easy smoothie recipe for college

MAKES: 1 Smoothie

Prep Time: 5 minutes
Cook Time: none (but it’ll take about 30 to 40 minutes to freeze bananas)
Total Time: 5 minutes


  • 2 bananas [$0.46]
  • 1/4 cup shredded sweetened coconut [$0.15]
  • 1 tbsp honey [$0.12]
  • 3/4 cup milk [$0.41]


  1. Peel and slice bananas into large chunks and place in a bowl.
  2. Cover bowl with plastic wrap and place in the freezer to freeze bananas.
  3. Place frozen bananas, coconut, honey and milk in a blender.
  4. Blend until smooth.
