It’s been a while since I’ve posted a Mission Possible Monday recipe here at the cafe so I’m going to keep this one real easy to accomplish.

Today’s mission, should you choose to accept it, is to kick off your shoes at the end of today, put on your flip flops and sip this Summertime Fruit Smoothie while chillin’ in the late afternoon sun! That shouldn’t be too hard to accomplish, right?

Peel a Kiwi without the Slip, Slide and Away

This fruit smoothie recipe includes kiwi which is slippery when you peel it with a knife. Here’s how you can hack that food prep problem and prevent the kiwi from slipping out of your hands.

How to Peel a Kiwi: Step 1

Simply slice both ends off the kiwi.

Insert a spoon between the fruit and the skin.

Turn the kiwi around the spoon until the skin is free.

Simple Smoothie Recipe for Summer Toss that freshly peeled kiwi in the blender with the other sweet tropical fruits and start blending!

Try This if You Don’t Have That

Shredded coconut adds texture to this smoothie like crushed Oreos add crunchy texture to a D.Q Blizzard. If you don’t have shredded coconut, or want a smoother smoothie, use a tablespoon of coconut milk instead. Another option is Malibu rum if you’re looking for an evening cocktail to sip on.

INGREDIENTS

  • 1 cup frozen mango chunks [$0.93]
  • 1 kiwi peeled [$0.50]
  • 1/2 banana [$0.23]
  • 1 tbsp shredded sweetened coconut [$0.04]
  • 1 cup orange juice [$0.54]

HOW TO MAKE

  1. Place mango, kiwi, banana and coconut in a blender.
  2. Add orange juice.
  3. Blend until smooth!
