Now this isn’t a Tuna Fish Sandwich you’d find in a cafeteria where the tuna is suffocating in a sea of mayonnaise. Let that tuna keep swimming in the ice cream scoop it’s being served with.

The tuna in this sandwich is on a mayo diet! In this sandwich we use three flavorful ingredients that work with the tuna, not drown it.

Ketchup is the secret ingredient! It likes being mixed with mayonnaise (and chopped pickles). The combination tastes just as good with tuna as it does on a juicy burger!

And instead of spreading butter on plain bread, dig around the fridge for light cream cheese and spread it on a toasted bagel. The cream cheese saddles you with fewer calories than butter and adds a slight tang with every bite!

Sweet red onion may not be a commonly stocked item in a college kitchen but it transforms sandwiches from cafeteria grade to deli worthy! A few thin slices on top is all you need! The rest of the onion can be stored in the fridge for 7 to 10 days. That gives you a chance to use it up in a stir fry, pasta sauce or wrap!

MAKES: Enough tuna for 2 Sandwiches

Prep Time: 8 minutes Cook Time: none! Total Time: 8 minutes

INGREDIENTS

  • 1 can (170 g) tuna fish [$1.50]
  • 2 tbsp light mayonnaise [$0.13]
  • 1 tbsp ketchup [$0.04]
  • 1/2 dill pickle, chopped [$0.24]
  • 1 bagel, sliced in half [$0.41]
  • cream cheese, about 1 tbsp [$0.17]
  • 1 tomato slice [$0.06]
  • 1 lettuce leaf [$0.03]
  • red onion, about 2 thin slices [$0.01]

HOW TO MAKE

  1. Mix together tuna, mayonnaise, ketchup and pickle in a bowl.
  2. Toast bagel slices.
  3. Spread cream cheese over one-side of toasted bagel slice
  4. Place lettuce over cream cheese. Top with tomato slice and tuna mixture.
  5. Top with red onion and second toasted bagel slice.
