Our recipe test team put this idea to the test and found that their first attempt produced an omelet that was overcooked. 🤔

They tell me that mastery of cooking a Coffee Mug Omelet happens quickly – once you get to know your microwave’s tendencies and temperaments.
As for what to put in the omelet, simply use what’s available in the fridge. How about diced red bell pepper, chopped deli ham, and cheese?
Not as drool worthy as a gourmet omelet, but still very satisfying as a quick breakfast, lunch or dinner!

COFFEE MUG HAM & CHEESE OMELET
MAKES: 1 Omelet TIME: About 5 Minutes
Ingredients
2 eggs
1 Tbsp. water or milk
1 tsp. soft butter or margarine
1/2 slice deli ham, chopped
2 Tbsp. diced red bell pepper (optional)
1/4 cup shredded cheese
pinch each salt and pepper
Steps
- Crack eggs in a microwave safe coffee mug. Add water (or milk) and butter. Whisk with a fork.
- Add ham, bell pepper and half the cheese to mug. Season with salt and pepper. Stir with fork.
- Place coffee mug in microwave and cook for 1 minute. Remove from microwave. Break-up and stir eggs with fork.Top with remaining cheese.
- Place mug back in microwave and cook until eggs set, about 15 seconds.

how big is the microwavable mug?
