My first attempt to cook an omelet in the microwave, produced one that was overcooked. My second crack at it (see what I did there) went much better.
The eggs were fluffy and moist!
Get to know your microwave’s tendencies and temperaments, and mastery of cooking an omelet in a coffee mug comes quickly.
As for what to put in the omelet, simply use what’s available in the fridge. How about diced red bell pepper, chopped deli ham, and cheese?
This microwave version turned out better than expected! It’s not as drool worthy as a gourmet omelet, but it’s a fast way to cook eggs for breakfast, lunch or dinner.

Ingredients
2 eggs / $0.80
1 tbsp water or milk / $0.07
1 tsp soft butter or margarine / $0.05
1/2 slice deli ham, chopped / $0.20
2 tbsp diced red bell pepper (optional) / $0.15
1/4 cup shredded cheese / $0.28
pinch each salt and pepper / $0.00
Directions
- Crack eggs in a microwave safe coffee mug. Add water (or milk) and butter. Whisk with a fork.
- Add ham, bell pepper and half the cheese to mug. Season with salt and pepper. Stir with fork.
- Place coffee mug in microwave and cook for 1 minute. Remove from microwave. Break-up and stir eggs with fork.Top with remaining cheese.
- Place mug back in microwave and cook until eggs set, about 15 seconds.
