My first attempt to cook an omelet in the microwave, produced one that was overcooked. My second crack at it (see what I did there) went much better.
The eggs were fluffy and moist!
Get to know your microwave’s tendencies and temperaments, and mastery of cooking an omelet in a coffee mug comes quickly.
As for what to put in the omelet, I simply use what’s available in the fridge. In this case, diced red bell pepper, chopped deli ham, and cheese.
Omelets are one of my favorite foods and this microwave version turned out better than expected! It’s not as drool worthy as a gourmet omelet, but it’s a fast way to cook eggs for breakfast, lunch or dinner.
