The extra good news is that sweet potatoes cost next to nothing. And, this microwave recipe is dead simple to make at the end of a busy day.
We think of this recipe as fast food that you don’t have to run a marathon to work off!

STUFFED SWEET POTATO SKINS
MAKES: 2 Stuffed Sweet Potato Skins TIME: About 15 Minutes
INGREDIENTS
1 medium sweet potato
2 tbsp. salsa
1 tbsp. low-fat sour cream
1/2 tsp chili powder
1/4 cup canned black beans, drained (or thawed frozen corn)
1/4 cup shredded cheese
1 spring onion, chopped (optional)
HOW TO MAKE
- Pierce holes in sweet potato with a fork in several places. Place on a plate and microwave on high power until tender inside, about 5 to 6 minutes.
- Cut the sweet potato in half (once cool enough to handle). Scoop out inside flesh with a spoon and place in a bowl (save the sweet potato skins). Mash sweet potato with a fork. Add salsa, sour cream, chili powder, beans (or corn if using). Stir well.
- Spoon equal amounts of sweet potato mixture back into each sweet potato skin. Top with cheese. Place back in microwave to melt cheese, about 10 to 15 seconds. Serve with spring onions on top (if using).
