Tex-Mex Egg McMuffin

Makes: 2 Servings | Prep Time: About 5 Minutes | Total Time: About 10 minutes
INGREDIENTS
- 2 eggs
- 2 Tbsp. milk (any kind you have)
- Pinch each salt and pepper
- 1/2 cup leftover taco filling (or cooked ground beef, chicken, pork, or veg. substitute)
- 1 spring onion, chopped (optional)
- 1/3 cup Tex-Mex shredded cheese (or any cheese you have)
- 1 English Muffin
HOW TO MAKE
- Crack eggs into a small bowl. Add milk. Season with a pinch of salt and pepper. Whisk with a fork.
- Heat a non-stick skillet over medium-low heat. Add egg mixture. Mix with a spatula to scramble. When eggs are almost set, add taco meat and spring onions (if using). Stir to heat then remove from heat. Sprinkle on cheese. Cover with lid to melt cheese.
- Toast English muffin. Top each half with equal amounts of egg mixture. Garnish options include: salsa, avocado slices, hot sauce or extra spring onions.

I didn’t have Tex-mex cheese so I seasoned sharp cheddar cheese with chili powder and it was very good. A nice change up from the normal bacon and eggs! I definitely will fix this again.
