“A delicious one-pan meal before finals devour your soul.“

You’re a week away from finals. The ramen packets are running low. And perhaps you’re debating whether to spend your last $12 on delivery or cook something easy for a fraction of the cost.
Enter the Cheese-Crust Quesadilla – a reckless, slightly unhinged way to cook a quesadilla.
A Redditor named Msanxiety247 (a name that perhaps feels a little too relatable right now) shared some rough guidelines that we used to piece together a 6-ingredient recipe.
Yes, the flip was a near disaster, and I could have crisped the cheese more, but the result still tasted amazing!
Msanxiety247 suggests this cheesy quesadilla can be ready in 5 minutes. My timer suggested more like 10 minutes – which will still get you back to pretending to study in no time. 😁

CHEESE-CRUST QUESADILLA

Makes: 1 Quesadilla | Prep Time: About 5 Minutes | Total Time: About 10 minutes
6-INGREDIENTS
- 1 large flour tortilla (10-inch / 25 cm)
- ¼ cup chopped green chilies (from a can)
- ½ cup leftover cooked chicken
- ¼ cup kernel corn
- 1 spring onion, chopped (optional)
- ½ cup grated cheese (use any kind you like)
HOW TO MAKE
- Heat a nonstick skillet over medium-low heat. Evenly sprinkle half the cheese on the skillet, then place the flour tortilla flat over top of the cheese.
- As the cheese melts and crusts under the tortilla top the tortilla with green chilies, cooked chicken, corn, spring onions and remaining cheese – or go with whatever filling combo you like. Flip half of the tortilla over the filling to create a half moon shape. Don’t worry if the cheese is still gooey on the side facing up. Continue to cook until cheese on the pan has crusted onto the tortilla, about 2 to 3 minutes. Flip to crust the cheese on the other side.
- Top with salsa and sour cream – or eat as is without toppings. Your call. Enjoy!
