I’m going to go ahead and circle “C”. How about you?
However, the full version of this broccoli salad recipe is always a hit during the holidays. Even those who consider broccoli a vile weed, pile their plates high with seconds.
The bad news is it takes FOREVER to chop the broccoli to make the full holiday version. The good news is this 15-minute version tastes is equally as good, with less chopping. No boiled broccoli required.

Holiday Broccoli Salad For One
MAKES: 2 Servings TIME: About 15 Minutes
INGREDIENTS
- 1 head of broccoli, cut into bite-sized pieces (about 2 cups)
- 1 green onion, chopped
- 1/2 cup red seedless grapes, cut into bite-sized pieces
- 1/3 cup light mayonnaise
- 2 Tbsp. sugar
- 1 Tbsp. white vinegar
- Big pinch of salt
HOW TO MAKE
- In a bowl, toss together broccoli, green onions and grapes.
- In a separate bowl, whisk together mayonnaise, sugar, vinegar and salt. Pour dressing over broccoli mixture and toss. Enjoy!
