For those of us who celebrate Thanksgiving, we are all-too-familiar with the main contribution that leftover turkey has to offer to the solo cook.
That’s right, endless turkey sandwiches. 🥪
Of course, how you use your leftover turkey is a matter that should be between you and your own personal stash.

But if you like the idea of cooked turkey, fried onions, bell peppers, salsa and sour cream snuggly tucked inside a warm tortilla wrap, then these Turkey Burritos might interest you.

TURKEY BURRITOS FOR ONE
Makes: 2 Burritos Ready In: 15 minutes
Ingredients
1 cup leftover cooked turkey, shredded with fork (or use leftover rotisserie chicken)
2 tsp cooking oil
1/4 red onion sliced (or use a yellow or white onion)
1 red bell pepper, seeded and sliced
1/4 cup salsa
1/4 tsp ground cumin
1/2 cup shredded cheese
2 medium flour tortillas (6-7-inch)
Sour cream for topping (optional)
Directions
In a skillet, heat oil over medium heat. Add onion and bell peppers. Stir and cook until slightly softened, about 3 to 4 minutes. Add turkey. Cook and stir until turkey is heated through. Remove skillet from heat. Stir in salsa, cumin, and cheese. Lightly season with salt and pepper. Cover to keep warm.
On a plate, cover tortillas with a damp paper towel. Heat in microwave until warm and pliable, about 15 seconds. Spoon equal amounts of turkey mixture on each tortilla. Top with sour cream (if using) and wrap tortillas to enclose filling. Enjoy!
