Chocolate-Strawberry Muffins
Makes: 12 Chocolate Muffins Prep Time: 10 – 15 minutes Bake Time: 16 to 18 minutes

Ingredients
1 ¼ cups all purpose flour
½ cup cocoa powder
2/3 cup sugar
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 eggs
¼ cup canola oil
1 cup strawberry yogurt
1 cup chopped fresh or frozen strawberries
icing sugar
Steps
Spray a 12-cup standard-size muffin pan with cooking spray. Set aside.
In a large mixing bowl, mix together flour, cocoa powder, sugar, baking powder, baking soda, and salt. In a separate mixing bowl, whisk together eggs, oil, and yogurt. Add wet ingredients to dry ingredients and mix just until dry ingredients are moistened. Divide muffin batter evenly among 12 muffin pan cups. Top each with an equal amount of chopped strawberries.
Bake in a 325 F (160 C) oven for 16 to 18 minutes or until toothpick inserted in the center of a muffin comes out clean. Remove muffins from pan and let cool on a wire rack. Dust muffins with icing sugar.
