Chocolate-Strawberry Muffins: Love at First Bite!


The blend of cocoa and strawberries makes these chocolate-strawberry muffins decadent, rich and indulgent!

Valentine’s Day may not be everyone’s favorite day of the year but I do like that it’s a day when you get full permission to make someone else feel special.

Maybe you love to bake. And maybe, you have friends in your circle who absolutely love chocolate.

Bake them a dozen chocolate strawberry muffins…it’ll make their day!

As for your Valentine…

Flowers may smell nice but they don’t taste rich and decadent like these chocolaty muffins!

With that said, I will still pick up flowers for my Valentine. She is in no way demanding, but I doubt a dozen chocolate muffins would quite cut it on their own.

Consider them bonus points for your efforts!

Chocolate-Strawberry Muffins


Makes: 12 Chocolate Muffins  Prep Time: 10 – 15 minutes  Bake Time: 16 to 18 minutes

Ingredients

1 ¼ cups all purpose flour
½ cup cocoa powder
2/3 cup sugar
2 tsp. baking powder
½ tsp. baking soda
½ tsp. salt
2 eggs
¼ cup canola oil
1 cup strawberry yogurt
1 cup chopped fresh or frozen strawberries
icing sugar

Steps

Spray a 12-cup standard-size muffin pan with cooking spray. Set aside.

In a large mixing bowl, mix together flour, cocoa powder, sugar, baking powder, baking soda, and salt.  In a separate mixing bowl, whisk together eggs, oil, and yogurt. Add wet ingredients to dry ingredients and mix just until dry ingredients are moistened. Divide muffin batter evenly among 12 muffin pan cups. Top each with an equal amount of chopped strawberries.

Bake in a 325 F (160 C) oven for 16 to 18 minutes or until toothpick inserted in the center of a muffin comes out clean. Remove muffins from pan and let cool on a wire rack. Dust muffins with icing sugar.
