Four-Bite Personal Sized Pizzas: Quick Win Wednesday


No delivery required! These four-bite personal sized pizzas are a cinch to make in the oven or toaster-oven. The pizza-barbecue sauce blend makes them extra tasty!

 Four-Bite Personal Sized Pizzas

When I lived off-campus at university, the house I lived in was located across the street from a small bakery that made the most delicious pizza bagels. As the name suggests, it’s a toasted bagel topped with pizza sauce and melted mozzarella cheese. They were awesome! I basically survived on them during final exams.

The only trouble with using a bagel as the base was the hot pizza sauce would leak through the hole of the bagel and burn your hand if you weren’t careful eating it.

Homemade Version

When I make my own mini-pizzas I use a toasted English muffin as the base. Fewer calories (80 to be exact) and little chance of hot sauce causing unnecessary trauma to my innocent hand. I also like to mix the pizza sauce with a spoonful of barbecue sauce for sweetness and added zip!

For a bite-sized dosage of healthy, I usually dice a bell pepper and slice a few mushrooms for toppings. This time I only found green bell pepper in my fridge so it sat shot-gun with the shredded mozzarella cheese on top!

Even though these four-bite pizzas are a no-brainer to make, there is a cooking tip worth knowing before you begin.

To keep your English muffin mini pizza from getting soggy

Whether you use a toasted bagel or English muffin, lightly brush the cut side of it with olive oil (or cooking oil) once it has been toasted. Think of the oil as a sneeze guard at a buffet. In this case, it prevents excess moisture from the pizza sauce from absorbing into the bread below. Crispy four-bite pizzas are more enjoyable to bite into than soggy ones – enjoy!

Ingredients

1 English muffin, halved / $0.31
2 tbsp canned pizza sauce / $0.11
1 tbsp barbecue sauce / $0.07
1/2 tbsp extra virgin olive oil / $0.06
1/4 cup green pepper, diced / $0.15
1/4 cup shredded mozzarella cheese / $0.30

Directions

  1. Toast each English muffin half.
  2. Meanwhile, mix together pizza sauce and barbecue sauce in a small bowl.
  3. Once English muffin is toasted and has slightly cooled, lightly brush each half with olive oil.
  4. Spread equal amounts of sauce mixture over each half. Top with diced bell peppers and shredded cheese.
  5. Set oven to broil. Place mini pizzas on a baking sheet. Broil in oven until cheese melts and begins to brown, about 4 to 5 minutes.
