You go full Italian nonna, and simmer extra tomato sauce on pasta night.
DAY TWO

NAKED CHICKEN PARMESAN SANDWICH

Makes: About 4 Servings | Prep Time: About 10 Minutes | Cook Time: 30 minutes
INGREDIENTS
- 2 teaspoons olive oil
- ½ onion, chopped
- ½ bell pepper, chopped
- 1 or 2 pieces of leftover Naked Chicken Parmesan
- 1 bun
- salt and pepper
HOW TO MAKE
- In a small skillet, heat oil over medium-high heat. Add onions and bell peppers. Lightly season with salt and pepper. Cook and stir until vegetables begin to soften and lightly char. Remove skillet from heat.
- Reheat, piece of leftover naked-chicken parmesan in microwave or in the oven.
- Set reheated chicken on a warm lightly toasted bun. Top with vegetables – and any extra sauce.
