NAKED CHICKEN PARMESAN SANDWICH

Makes: About 4 Servings | Prep Time: About 10 Minutes | Cook Time: 30 minutes

INGREDIENTS

  • 2 teaspoons olive oil
  • ½ onion, chopped
  • ½ bell pepper, chopped
  • 1 or 2 pieces of leftover Naked Chicken Parmesan
  • 1 bun
  • salt and pepper

HOW TO MAKE

  1. In a small skillet, heat oil over medium-high heat. Add onions and bell peppers. Lightly season with salt and pepper. Cook and stir until vegetables begin to soften and lightly char. Remove skillet from heat.
  2. Reheat, piece of leftover naked-chicken parmesan in microwave or in the oven.
  3. Set reheated chicken on a warm lightly toasted bun. Top with vegetables – and any extra sauce.
