Our recipe testers often get asked for their meal prep ideas to minimize the cooking and maximize the A+ Eats for the week ahead. Here are three of their meal prep suggestions to prepare in advance to ace your Bachelor of Eating Well over the next 7 days:
1. Creamy Cajun Chicken Pasta
Cook the seasoned pieces of chicken breast then toss with your favorite pasta! Add roasted red peppers (from a jar), and a savory cream sauce to big-up the flavor! Portion into containers for easy lunches or dinners. Get the recipe here.
Top Tip: If you want skip making the sauce, store-bought Alfredo Sauce will work as a substitute.
2. Buffalo Chicken Sloppy Joe’s
Prepare the Sloppy Joe Filling on Sunday and store safely in the fridge. During the week, simply re-heat the amount you need to set on a bun for a sloppy-and-satisfying lunch or dinner. Get the recipe here.
Top Tip: The Café’s Take-Out Menu includes a 6-ingredient version of this recipe! Makes this delicious sandwich even easier to make!
3. Mexicana Chili
Cook the ground meat with onions and garlic, drain the fat, then toss in the slow cooker with the remaining ingredients. Put your feet up and let the slow cooker do the rest. There will be more than enough chili to fill your bowl multiple times during the week! Get the recipe here.
