These Buffalo Chicken Sloppy Joe’s are just like the one’s you loved as a kid, only WAY healthier!
For fun, imagine you decide to quit eating red meat.
And let’s say in this imaginary story, you’re at a gathering with friends and somebody brimming with cheer says…
“How about we have Sloppy Joe Sandwiches for lunch!”
What’s more, suppose you LOVE Sloppy Joe’s (who doesn’t?). And, just when everyone begins to give high fives for Sloppy Joe Sandwiches, the reality of the situation hits you.
As your chin drops towards your chest, you let out a sad whimper and quietly say…
“I no longer eat red meat.””
Then, out of nowhere, a caring and thoughtful person, who happens to be a College Recipe Café regular 😉 , puts a reassuring arm around you and says…
“Try not to feel down (insert name). We know you’ve given up eating red meat. But if you’re fine with eating chicken, I have made an absolutely awesome Buffalo Chicken Sloppy Joe Sandwich for you to enjoy.”
You slowly lift your head. There, in the distance, is a saucy meat filled sandwich topped with a slow moving river of Ranch dressing (or blue cheese dressing – kinda depends which you prefer in this story).
You wrap your hands around the sandwich and bite in. The room goes silent as you chew. Just then, the thoughtful person who made you the sandwich asks…
“So, does it taste as good as you hoped it would?”
You raise your head – exposing the sauce stains on the side of your chin. Upon chewing the last morsel of your Buffalo Chicken Sloppy Joe Sandwich, you reply…

BUFFALO CHICKEN SLOPPY JOE’S

Ingredients
1 lb extra lean ground chicken / $4.99
1 can (7.5 oz / 213 ml) traditional pizza sauce / $0.95
1 can (4.3 oz / 127 ml) chopped green chilies / $1.97
1 Tbsp. brown sugar / $0.06
1 Tbsp. Frank’s Buffalo Wing Sauce / $0.17
1/4 cup low-fat Ranch Salad dressing (or Blue Cheese dressing) / $0.34
1/2 cup grated carrot (optional) / $0.27
4 sesame seed hamburger buns / $1.84
Putting it Together
In a large skillet, cook ground chicken over medium-high until it is fully cooked through and no longer pink, about 6 to 7 minutes. Season with salt and pepper. Reduce heat to low. Stir in pizza sauce, green chilies, sugar and wing sauce. Stir to combine with cooked chicken.
Toast hamburger buns (optional). Top each bottom half of toasted buns with equal amounts of chicken mixture. Top each with equal amounts of dressing and grated carrot. Place each top half of toasted buns on top. Enjoy!
