For instance, take a look at the salad below. It’s what I basically grazed on throughout this past winter ⇓.

Looks dull, doesn’t it? Believe me, even with croutons it’s still not overly enticing.

A lot more inspiring, right? It’s vibrant, healthy, insanely appetizing, and can be assembled in about 10 minutes! Here’s how to make:

To start, simply whisk together the following ingredients to prepare the vinaigrette.
- 1 Tbsp. extra virgin olive oil
- 2 tsp. red wine vinegar (or use cider vinegar)
- 1 tsp. honey
- Pinch each salt and pepper

Add the spring mix greens (about 1 1/2 cups) to the bowl, then toss with cooking tongs – or clean hands.

As for the toppings: berries, cheese, nuts or even pumpkins seeds work well. For this version we used, crumbled feta, chopped almonds and halved ripe raspberries – for a touch of sweetness!

Sometimes mustering up the energy to cook is just easier when the available ingredients are vibrant and inspiring!

MAKES: 1 Salad TIME: About 10 Minutes
Ingredients
1 Tbsp. extra virgin olive oil
2 tsp. red wine vinegar
1 tsp. honey
Pinch each salt and pepper
1 1/2 cups spring mix greens
1/4 cup raspberries, halved
2 Tbsp. crumbled feta
2 Tbsp. chopped almonds
Steps
To make vinaigrette, whisk to combine olive oil, vinegar and honey in a personal-sized bowl. Season with salt and pepper. Add mixed greens to bowl. Toss to coat greens with vinaigrette.
Top salad with raspberries, feta and chopped almonds.
