Hmmm…what to make with the last few remaining bread slices in the bag – which usually includes the end pieces that nobody ever seems to want?
Here at the Café, we find that those end pieces happen to taste really good when cut into triangles and baked as Maple-Cinnamon French Toast!
There is no messy egg dipping, flipping with a spatula, or even having to clean a frying pan afterwards.
In other words, this a super lax way to maximize the value of the last few bread slices in the bag.
It is also a good excuse to break out the berries and whipped cream as well!

Baked Maple-Cinnamon French Toast

Makes: 4 to 6 Servings Ready In: About 40 to 45 minutes
Ingredients
Soft butter
4 slices of bread (include the end pieces)
3 eggs
2/3 cup vanilla almond milk
pinch or two of salt
Glaze
1 Tbsp. melted butter
2 Tbsp. brown sugar
1/4 tsp. ground cinnamon
1/4 cup maple syrup
Steps
Butter the bottom of an 8-inch baking dish. Use kitchen scissors to cut each slice of bread into four triangles. Overlap the triangles in two rows inside the baking dish – crust side down.
Crack eggs into a large bowl and whisk together with the Almond milk and salt. Evenly pour mixture over the bread. Let sit for 10 minutes.
Meanwhile, in a small bowl stir together the melted butter, sugar, cinnamon and maple syrup. Drizzle over the bread. Bake in a 350 F oven for 30 minutes. Top with fresh berries and whipped cream.

No Vanilla Almond Milk? Mix 2/3 cup of milk with 1/4 tsp vanilla
