The story behind this One Pan Orzo Pasta is, way back when an assistant at Glamour Magazine made a similar dish for her boyfriend. The legend is, thirty days later he proposed to her.
Fact or Myth? Not sure. I do know that anyone can whip together this one-pan dish in under 20 minutes. It’s also incredibly versatile. Add chicken or sausage. Or not. The orzo holds it own.

One-Pan Orzo Pasta
Makes: 4 servings | Prep Time: About 5 Minutes | Total Time: About 20 minutes

Ingredients
1 tablespoon cooking oil
½ onion, chopped
1 cup orzo pasta
2 tablespoons tomato paste (or use tomato sauce)
3 cups broth (chicken or vegetable)
Pinch of salt
Pinch of dried thyme (or use dried oregano or dried basil)
2 tablespoons of grated Parmesan cheese (or any cheese you have on hand)
How To Make
- Heat oil in a large skillet over medium heat. When oil is hot, add onion. Cook and stir onion until it softens. Stir in orzo and tomato paste. Cook and stir for a minute to slightly toast the orzo. Pour in broth. Add salt and dried thyme. Cook (and stir every so often) until orzo absorbs almost all the broth, about 15 minutes. Remove from heat.
- Stir in Parmesan cheese, or top with whatever cheese you happen to have. Enjoy!
