Chewy Fudge Like Texture!
How much fun do you have rolling the perfect snowball?
Well, making this deliciously-chewy-straight-from-the-freezer-holiday-treat is…nothing like that.
It’s more like rolling mudballs. But don’t let my complete failure to sell this recipe make you skittish about rolling a dozen of these tasty holiday treats.
You just have to know…what you already know ⬆.

That’s is to freeze them. They will firm up with a fudge-like texture without freezing solid (just like the perfect snowball that explodes on impact).
Ya know what’s also really fun about making this recipe? Watching the milk, butter, and sugar mixture turn into an expanding blob of froth in the pot.

That’s when you get to play Super-Chef and beat it back with a spoon or whisk to save the day from a frothy mess. 🦹♀️🦸♂️

Baking cookies can’t keep you on your toes like that.

No-Bake Chocolate Snowballs
INGREDIENTS
- ¾ cup sugar (white or brown)
- ½ cup milk (dairy or plant-based)
- ¼ cup butter
- 1 cup oats
- ½ cup grated coconut (sweetened or unsweetened)
- ¼ cup cocoa
- ½ tsp. vanilla
- Pinch of salt
- Extra finely grated coconut for coating
HOW TO MAKE
- In a large saucepan, bring the sugar, milk and butter to a boil. Reduce the heat and cook, stirring often to prevent the mixture from frothing too much and boiling over. Keep stirring for 6 minutes, then remove the saucepan from heat.
- Stir in oats, coconut, cocoa, vanilla and salt. Let mixture cool in saucepan or transfer the mixture to a bowl and place in the fridge to cool and slightly firm.
- Roll the mixture into a dozen (or so) equal-sized mini snowballs. Put about a half cup of finely grated coconut on a plate or shallow bowl and roll the balls in it to coat. Gently place in a reusable food storage container or bag and place in the freezer. They’re deliciously chewy straight from the freezer.
