No-Bake Chocolate Snowballs

INGREDIENTS

  • ½ cup milk (dairy or plant-based)
  • ¼ cup butter
  • 1 cup oats
  • ½ cup grated coconut (sweetened or unsweetened)
  • ¼ cup cocoa
  • ½ tsp. vanilla
  • Pinch of salt
  • Extra finely grated coconut for coating

HOW TO MAKE

  1. In a large saucepan, bring the sugar, milk and butter to a boil. Reduce the heat and cook, stirring often to prevent the mixture from frothing too much and boiling over. Keep stirring for 6 minutes, then remove the saucepan from heat.
  2. Stir in oats, coconut, cocoa, vanilla and salt. Let mixture cool in saucepan or transfer the mixture to a bowl and place in the fridge to cool and slightly firm.
  3. Roll the mixture into a dozen (or so) equal-sized mini snowballs. Put about a half cup of finely grated coconut on a plate or shallow bowl and roll the balls in it to coat. Gently place in a reusable food storage container or bag and place in the freezer. They’re deliciously chewy straight from the freezer.
