“When In Doubt Make a Frittata!
Here at the Café, our recipe testers are often asked about what to make when lost for meal ideas that can be made on the weekend and enjoyed multiple times throughout the week.
Their answer: “When in doubt make a frittata.”
What’s a frittata? It’s an egg-based Italian dish that looks like a deep-dish pizza and is as easy-to-make as an omelet.

Step #1: Get Cracking
The first step is a breeze. Simply crack 6 eggs in a bowl…
Then, whisk them with a 1/4 cup of milk and a pinch of salt and pepper.
Step #2: Heat the Hash Browns
This step will fill your kitchen with amazing aromas…thanks to the pan-fried hash browns!
Brown 2 cups of frozen hash browns and 1 cup of diced vegetables (fresh or frozen) in a large skillet for about 6 minutes in 1/2 tablespoon of canola oil over medium heat.
Step #3: Add the Eggs
When the hash browns and veggies are heated though, add the whisked eggs.
Poke the mixture in a few places to help the egg mixture seep between the hash browns. Cover with a lid, reduce the heat to medium low, and cook until the eggs are almost set, about 6 to 7 minutes.
Super simple, right?
Step #4: Cheese Please
Like an omelet, a frittata looks naked without cheese! 🧀
Once the eggs are set, sprinkle on 1 cup of cheese. Remove the skillet from the heat, cover with the lid and let it sit until cheese is melted, about 2 minutes.
When the cheese is melted, loosen the edges from the skillet with a knife and slide your gorgeous looking frittata onto a cutting board. Cut into wedges and dig-in!

Hash Brown Frittata
Ingredients
6 eggs
¼ cup milk (any kind you like)
½ tablespoon canola oil
2 cups frozen hash browns
1 cup diced frozen vegetables (or use fresh)
1 cup shredded Cheddar cheese (4 oz. / 114 g)
Pinch each salt and pepper
Steps
- Crack eggs, in a mixing bowl. Add milk and season with a pinch of salt and pepper. Whisk until combined. Set aside.
- Heat oil in a non-stick skillet over medium heat. Add hash browns and vegetables to skillet. Cook and stir until hash browns and vegetables are heated through, about 6 minutes. Add the whisked eggs to skillet. Poke mixture to allow eggs to seep between the spaces in the hash brown mixture. Cover skillet with a lid and reduce heat to medium low. Cook until eggs are set, about 6 to 7 minutes.
- When eggs are set, remove lid from skillet. Evenly sprinkle frittata with cheese. Remove skillet from heat and cover with lid to allow cheese to melt. Transfer the frittata from the skillet to a cutting board. Cut into wedges and dig in!
