Vegetable Sushi Wraps: For a Quick Brainpower Boost


Broccoli Coleslaw

It’s like cheating. But legit!

Ingredients

  • ½ cup broccoli coleslaw
  • 2 tsp. reduced-sodium soy sauce
  • ¼ tsp. Tabasco or Sriracha sauce (optional)
  • 1 flour tortilla
  • 2 tbsp. plum sauce
  • 1/2 cup sliced red bell pepper
  • sweet Thai chili sauce (for dipping)

Directions

  1. Mix broccoli coleslaw and soy sauce in a bowl. Stir in Tabasco or Sriracha (if using). Set aside.
  2. Spread plum sauce over one side of flour tortilla. Place desired amount of broccoli mixture on top of tortilla. Add sliced red bell pepper. Roll and cut into thirds. Dip into sweet Thai chili sauce. Enjoy!
