It starts with broccoli coleslaw. Which is essentially broccoli stems cut into matchsticks in place of shredded cabbage. The cabbage version will work as well in this recipe.
From what we have been told (by people much smarter than us) both broccoli and cabbage are good sources of vitamin K – which is known for boosting cognitive function and brainpower! 📈

Low-sodium soy-sauce, plum sauce, and a sliced bell pepper round out the flavors.
From there, simply roll, bite-in, and let your memory cells soak in all that Vitamin K goodness!
It’s like cheating. But legit!

VEGETABLE SUSHI WRAPS
Ingredients
- ½ cup broccoli coleslaw
- 2 tsp. reduced-sodium soy sauce
- ¼ tsp. Tabasco or Sriracha sauce (optional)
- 1 flour tortilla
- 2 tbsp. plum sauce
- 1/2 cup sliced red bell pepper
- sweet Thai chili sauce (for dipping)
Directions
- Mix broccoli coleslaw and soy sauce in a bowl. Stir in Tabasco or Sriracha (if using). Set aside.
- Spread plum sauce over one side of flour tortilla. Place desired amount of broccoli mixture on top of tortilla. Add sliced red bell pepper. Roll and cut into thirds. Dip into sweet Thai chili sauce. Enjoy!
