Yes, we know, this noodle recipe is not completely like the street food that you might encounter in Asia, but the flavors get you pretty damn close.

Have you ever hesitated to make a stir-fry because of the time it takes to chop those fresh veggies? Yep, we feel ya!
With this easy noodle recipe, the chopping is minimized.
The only ingredient that needs a chop is one bunch of scallions (aka spring onions, green onions, salad onions). To make the noodle sauce, you will also need some grated ginger snow. Wait, what’s that? The video explains. ⬇
The final step is to imagine sitting at a busy street food cart in Asia eating noodles for dinner – without ever leaving your kitchen.

Scallion-Ginger Noodles
MAKES: 2 Servings TIME: About 10 Minutes
INGREDIENTS
- Chow Mein Noodles (enough for 2 servings)
- 2 scallions chopped (green parts only)
- ½ tbsp. freshly grated ginger
- 2 tbsp. vegetable or canola oil
- 1 tbsp. soy sauce
- ½ tbsp. rice vinegar
- ¼ tsp. yellow mustard
- ¼ tsp. sesame oil
HOW TO MAKE
- In a pot, cook the noodles (we like Chow Mein noodles because they cook in 3 to 4 minutes, but any noodle will work). Drain noodles. Set aside in a separate bowl.
- In the same pot, whisk together the remaining ingredients to make the sauce. Warm and stir over low heat for 2 minutes to kickstart the fusion of flavors. Return cooked noodles to pot and toss with heated scallion-ginger sauce. If you like, add a squeeze of lime juice, more sesame oil, or even sriracha. Top with thinly sliced scallions.
