Here at the cafe I like to keep the recipes on the healthy side when I can.

But chickpeas? Really?

In the past, I would have been more likely to intentionally crash my grocery cart into a grocery store display of canned chickpeas than purposely place a can of chickpeas in the cart.

Then I tasted hummus.

Me likey dat hummus!!!

Nacho Hummus Dip with Tortilla Chips

At the time, I found it hard to believe that hummus is made from blended chickpeas.

I was like….WHAT?!

To make, all you do is blend the chickpeas with your favorite flavors in your blender.

EXACTLY like blending a smoothie!!!

No hype. It’s that easy.

To make this Nacho Hummus Dip, simply blend chickpeas with olive oil, salsa, a clove of garlic and a teaspoon of taco seasoning. Hit the blend button and BAM….your hummus is ready!

Healthy and Addictive Nacho Hummus Dip to Sink Your Tortilla Chips Into!!!

Serve as a dip for tortilla chips and cut veggies or simply spread on a bagel to make a toasted bagel hummus sandwich.

As you can imagine, hummus is good for you – just like Brussels sprouts. But it tastes WAY better.

In fact, this Nacho Hummus is downright addictive.

NACHO HUMMUS DIP


Makes: About 1 cup or 8 oz.  Prep Time: 5 minutes  Blend Time:  1 minute

Ingredients

1 can (540 ml) canned chickpeas, rinsed and drained
½ cup salsa
¼ cup olive oil or extra virgin olive oil (your choice)
1 clove garlic, chopped
1 tsp. reduced-sodium taco seasoning
Pinch crushed red pepper chili flakes (optional)

Steps

Pour half the chickpeas (270 ml or 1 1/4 cups) in a blender. (Place the remaining chickpeas in a glass or plastic container to store in the fridge or freezer. Use them to make more homemade hummus or roast in the oven for a healthy snack).

Add the remaining ingredients to the blender and blend until smooth.

Serve as a healthy dip for tortilla chips, or use as spread for wraps, chimichangas or toasted bagels.
