Funny how certain ingredients can change how we feel when we cook for ourselves. Take a look at the salad below. It’s what I basically grazed on during the winter ⇓.
Looks kind of dull, doesn’t it? Believe me, even with croutons it’s not very exciting to prepare, or eat.
Compare it to the spring mix salad I tossed together yesterday ⇓!
It’s vibrant, healthy, insanely appetizing, and can be made in minutes! Simply whisk together the three ingredient vinaigrette. Add the spring mix greens to the bowl. And then toss – I like to get in there like Jamie Oliver does to toss the two together with my hands!
As for the toppings, go with your favorite cheese, nut and berry combination. I topped mine with crumbled feta, chopped almonds and raspberries and I could hardly wait to dig in! 😀
Sometimes it can be tough to muster up the energy to cook for ourselves.
And sometimes it’s easier when spring arrives and we have access to vibrant and appetizing ingredients to play with in the kitchen!

Fresh Spring Mix Salad with Feta, Almonds and Berries.
Makes: 1 Spring Mix Salad ~ Cost: $1.63 ~ Time: About 10 minutes

Ingredients
1 Tbsp. extra virgin olive oil / $0.11
2 tsp. red wine vinegar / $0.10
1 tsp. honey / $0.06
Pinch each salt and pepper / $0.02
1 1/2 cups spring mix greens / $0.50
1/4 cup raspberries, halved / $0.20
2 Tbsp. crumbled feta / $0.40
2 Tbsp. chopped almonds / $0.24
Putting it Together
To make vinaigrette, whisk to combine olive oil, vinegar and honey in a small bowl. Season with salt and pepper.
Add mixed greens to bowl. Toss to coat greens with vinaigrette.
Top salad with raspberries, feta and almonds.
