It’s Friday! Time to scan the cavernous depths of my fridge for leftovers.
Hmmm….what do we have here? A bowl half-filled with leftover macaroni and cheese. Not exactly appetizing to the eyes. Let’s see what we can do to make it look, and taste, more interesting!
Let’s Make a Grilled Mac and Cheese Sandwich!
I saw the idea for a Grilled Mac and Cheese Sandwich while pinning on Pinterest. Are you an active pinner? Let’s be friends on Pinterest! We’ll exchange pins, share inspiring quotes, and go ole skool every so often by pinning food served in mason jars! It’ll be fun!!!
Anyways, let’s get back to the sandwich. It starts with buttering one side of a slice of bread. Now if you’re leftover mac and cheese looks as dry as mine, spread your favorite sauce on the other side of the bread slice you just buttered.
I used barbecue sauce! Ooh…how about a few dashes of Sriracha sauce? That’d be good!!!
Next, melt a spoonful of butter (or margarine) in a non-stick skillet over medium heat. Once melted, set the bread slice in the skillet, butter side down, and top with the leftover mac and cheese followed by grated cheese.
Sauce the second slice of buttered bread before placing on top; butter side up.
Cook it, Flip it, Cut it, Eat it!
Cook over medium heat for 2 to 3 minutes per side. Cooking at that temperature gives the cheese time to melt without burning the bread.
Cut in half.
