Spring Roll or Sushi? I call this recipe “The Poser” because these healthy vegetable wraps take on a different look depending how you slice them.
If they look like they’re difficult to make, they’re not. See those perfectly cut julienne vegetables rolled inside? Yeah, I didn’t cut those.
The people who made this broccoli coleslaw did it for me! And I love them for that! All I had to do was spread plum sauce on the tortilla, mix the broccoli slaw with soy sauce and roll. Oh, and I did add sliced red bell pepper for extra sweetness but that’s optional.
Roll them tight, cut in half, and they look like a vegetable spring roll!
Or slice into bite sized pieces to turn them into vegetable sushi appetizers!
What I love about this recipe is it’s open to wild card ingredients like sweet red bell pepper slices. Lots of options for you here. Think of what you like in your stir-fry and it’ll be great in these wraps!

Ingredients
1/2 cup broccoli coleslaw / $0.31
1/2 tsp reduced-sodium soy sauce / $0.02
1 flour tortilla / $0.15
2 tbsp plum sauce / $0.25
red bell pepper slices (optional) / $0.15
black pepper / $0.00
Directions
- Mix broccoli coleslaw and soy sauce in a bowl. Set aside.
- Spread plum sauce over one side of flour tortilla.
- Place coleslaw on plum sauce, top with red bell pepper slices and lightly season with pepper.
- Roll and cut in half or slice in to bite sized pieces.
