Sticking around campus this Thanksgiving? There’s no reason you can’t eat almost as well as those who will be travelling home.
Turkey, stuffing and pumpkin pie recipes aren’t our specialty here at the cafe but I’ve put together a few choice recipes from the menu that can be made quickly and enjoyed throughout the day.
The recipes in this Thanksgiving Day Meal Plan may not be on par with moist turkey topped with homemade gravy and cranberry sauce. But at least you won’t have to feel guilty about passing on a certain family member’s casserole again this year.
Apple Cinnamon Oatmeal
The bright side of being stuck at college on Thanksgiving is the day is ALL yours! Do what you like and start it right with a bowl of Apple Cinnamon Oatmeal.
Oatmeal keeps you feeling full for hours so you can do whatever you like in the morning without hunger getting in the way. But before heading out the door, cook up some bacon and resist eating it. Store in the fridge to use later in the day.
Hot Turkey Cheese Melt
Do you prefer ham or turkey on Thanksgiving? You can go either way when making this delicious cheese melt for your Thanksgiving Day lunch.
The beauty of this Hot Ham, Cheese and Apple Mustard Sandwich is it cooks quickly in the toaster oven. And the combination of apple mustard sauce, ham and melted cheese is pure awesomeness!
Football Food
If your plans include watching the football game, then nachos are a must!
Place a handful of tortilla chips on a baking sheet, spoon on some salsa, sprinkle with cheese and toss on sliced olives. Broil in the oven (or toaster oven) for 4 to 5 minutes. Enjoy the game!
B.L.T Wraps with Avocado Sauce
Remember the crisp bacon you cooked in the morning. Time to put it to use for your Thanksgiving dinner!
These B.L.T Wraps include a tasty avocado sauce spiked with Buffalo wing sauce (fits right in if you’re still watching football)! It’s no turkey dinner but they’re tasty enough to at least make you feel like you’re not totally missing out on good food. And with the bacon already cooked you can make them in minutes!
Snack Pack Chocolate Mocha Mousse
No dessert recipe on the cafe’s menu can compete with a good homemade pumpkin pie topped with whipped cream.
One the bright side it only takes a minute or two to make this Snack Pack Chocolate Mocha Mousse and there’s lots of lip-smacking chocolaty goodness to be found in each spoonful!
Buttery Parmesan-Oregano Popcorn
With everyone gone you get to watch whatever you want in the evening!
Pop some Buttery Parmesan and Oregano Popcorn, settle in on the sofa and snack away as you watch your favorite movie or series.
